LAMB STEWNIKKI HEYDER: Today we’re making a beautiful lamb stew which is a great way to get iron into our diet So not only do we have lamb but we’ve also got lentils and spinach What I’ve done with the lamb here is I’ve actually cut it myself so I can get rid of the excess fat because that’s where all the saturated fat is and we don’t want that in our diets So basically this is a great one pot wonder it’s good for the whole family great for a winter’s dinner and it’s very very easySo now what I’m going to do is get my olive oil here and my lamb and I’m going to sear that off in the pot first So I’ll just pour in half the oil save the other half for the onion later in a nice hot pan and we will add in the lamb OK so that’s browned we’re just going to grab a bowl and tip it into the bowl and then start cooking off all our vegetablesOk so I’ll just turn this heat back on and pour in the rest of our olive oil here So now we’re just going to cook off the onions and the garlic and we’ll come back and get our spices So just tip the onions in let them soften a little bit Ok so these onions have gotten a little bit of colour they’ve definitely softened so now we’re going to add our garlic in and the reason we don’t add it in at the same time is because the garlic would actually burn if it cooked for the same amount of time as the onionSo we’ve added that in we’re going to add in our spices as well We’ve got turmeric ground coriander and ground cumin so these are going to be some beautiful aromatics for the dish So we’ll just add them in So these are nicely toasted and are giving off a really beautiful smell so now I’m going to add in the lamb that I cooked off earlier ? so mix that through as well as some of our vegetables so we’ve got some fresh celery here and some chopped carrots so we’ll add them in because they’re going to take a lot longer to cook than the spinach or the chickpeas Put them in and give that a stir And then we will add in our tinned tomatoes which will add a nice flavour to it give that a good mixIf you want a bit of extra spice remember that you can always add freshly chopped chilli or dried chilli to the dish as wellNow I’m going to pour in my water and I’m going to let that cook for about half an hour so I’ll just add the water in and give that a mix put the lid onOnce that’s cooked for half an hour I’ll then add in the lentils here these have actually already been soaking for an hour just to tenderise them and then we’ll put them in they will cook for another hour and just before I serve I’ll add in my leafy green spinach my chickpeas my coriander and my parsleyOk so there we have it this has been cooking for an hour and a half It’s very fresh very healthy it does take a while to cook but it will keep in the fridge and it will feed a lot ? so let’s serve it up Just get a nice ladleful and if all these grains and veggies aren’t enough you could serve it with a little bit of brown rice but just remember potion controlSo there we go a big serve of veges lots of iron and just to serve a nice dollop of low fat yoghurt and a mixture of fresh parsley and fresh coriander DeliciousCASEY BEROS: Happiness can be an elusive and sometimes misunderstood emotional state Which is why there are now institutes and many researchers dedicated to examining its causes and its ability to allow us to lead a better life So can money really buy happiness or is it the simpler things in life that will pay off in our pursuit I spoke with Professor John Helliwell a happiness expert from the University of British Columbia and sent Rich Brophy out to the streets to find out what makes people happy and ask how they’d rate their happinessPROF JOHN HELLIWELL: It’s about much more than income so we’re finding the social supports for wellbeing are extraordinarily important Do you have someone to count on What is your network of family and friends like Do you trust the police do you trust your neighbours if you dropped your wallet would your neighbour be likely to return it would the police be likely to return it Even a small change in that likelihood is worth many times your incomeRICH BROPHY: How would you rate your happiness on a scale of one to tenWOMAN 1: 9RICH BROPHY: 9 That’s pretty good and is Jasmine taking up the other oneWOMAN 1: She is I’m only not happy when she screams her head off and I can’t do anything because she’s screamingRICH BROPHY: and what makes you happy Jasmine (laughs) No questionsPROF JOHN HELLIWELL: To talk about the pursuit of happiness is misleading because happiness is a result of doing the right things rather than something that yields to pursuit The idea that happiness and hedonism are related well Aristotle and modern science agree that’s not right and that true happiness infact not only comes from doing the right things and doing things with others for others but it’s enormously productive so that children who are in positive states of mind and having fun in their schools actually learn faster People in the workplace who are having fun in the work place in a trusted workplace where their subjective wellbeing are much more productive Everybody from residents of eldercare facilities to hospital patients to students they’ll do better they’ll recover better they’ll live longer and they’ll learn fasterRICH BROPHY: What makes you guys happy You can give me the answer that you give infront of each other and then you can give me the answers that you would say when the other one’s not thereWOMAN 2: Just general life I mean because we’ve just started our relationship so you know it’s all new and happy exciting exploring we do alot of stuff too so yeahRICH BROPHY: OkMAN 1: I like bondingRICH BROPHY: Bonding is what make you happyMAN 1: Yeah yeah BondingRICH BROPHY: Ok bonding Not bondageMAN 1: Not that kind of bondageRICH BROPHY: Yeah you’ve only just met so don’t need to be pushing the boundaries just yetCASEY BEROS: What about trust as a factorPROF JOHN HELLIWELL: We originally started this research because that’s the way the survey evidence was built with a very general trust question: In general do you think people can be trusted Or alternatively: You can’t be too careful in dealing with people And then we supposed if you dropped your wallet with $200 in it how likely do you think it is to be returned in tact if found by a: A policeman b: a clerk at a local store c: a neighbour or d: a stranger So we were able to ask this question in many countries and you’d find of course there really were big differences across countries in who was most likely to return the wallet and how likely they were and in all cases it really mattered people really cared about where they were in their kind of society because that’s symbolic right Returning a wallet is much more than people will do what they say they will returning a wallet is coming out of yourself really engaging and doing something it’s a very benevolent actIt turns out systematically for one reason or another we’re still trying to unpack this people believe the world is not as good as it is So by asking this wallet question we know how likely people in Toronto think that a wallet if found by a stranger would be returned And they think there is about a one quarter chance it’ll be returned A newspaper in Toronto dropped 20 wallets and 16 were returned it’s a small sample but 16 out of twenty is simply not the same as 25% so in fact people are much more trustworthy than we think they areWOMAN 3: Oh my happiness Well some days it’s really low Depends on the mood and what’s going on and family when you have a family and grand children people getting divorced and the break up of marriages ?
